A 60:40 blend of Chardonnay and Pinot Noir, both barrel fermented, and aged an amazing 66 months on the lees. Disgorged in June 2020, with a pretty low 8g dosage, this is rich, dry and full of weighty brioche flavours.
The title, Come quickly, I am Drinking the Stars is attributed to Dom Perignon on what is claimed by the Champenois as the night he ‘invented’ Champagne.
