A blend of Cabernets Sauvignon and Franc as warm as the Languedoc itself. An intense hit of black fruits on the nose carries through onto a palate where it intermingles with lifted spices and hints of blueberry.
Francois Gimié works 30 hectares of vineyards alongside the Canal du Midi and up in the hills near Beziers. The land has an ancient link with winemaking and Francois often finds Roman pots and fragments of winemaking equipment, such as Amphora in the vineyards. Part of this area used to be an ancient ‘Etang’ (lake) and it is a rich area for fossils of all types. The oysters and shellfish fossils are incredible and interesting as his vines are at least 25 km from the sea.
